Delicious grain free, sugar free banana loaf

I love banana loaf, but have found it difficult to create a recipe that is grain free, sugar free, and does not contain any form of corn/maize (important for Da Son).

It’s taken a fair bit of experimentation but I think I finally have a winner.

BIG PLUS: It got a thumbs-up from Da Kids, who showed fantastic willpower to save some for school the next day.

I didn’t take step-by-step photographs and will add them in when I bake this again.

Meanwhile, try this and enjoy!

** Preheat your oven to 180°C**

Mash & Mix:
* 3 small bananas (or two large ones)
* about a quarter cup of finely chopped fresh dates (or, 2 tbsp xylotol)
* 4 large eggs

Sift in & mix well:
* 2 cups almond meal (If you can’t find ground almonds, pop them into your coffee grinder and blitz ’em until you have a fine flour-like consistency
* 1 cup coconut meal (process dried coconut flakes in your coffee grinder)
* 1 teaspoon baking powder
* 1/2 teaspoon baking soda
* 1/2 teaspoon cinnamon
* 1/2 teaspoon nutmeg

Mix in:
* 1 teaspoon apple cider vinegar
* 1 teaspoon vanilla essence (you can also use vanilla pod to keep things fresh, but it can get expensive)
* OPTIONAL: A handful chopped pecan nuts (or sunflower seeds… whatever takes your fancy)

Once the batter is mixed well, pour it into a loaf tin that is lined with greased baking paper, and bake for approx 45 – 50 minutes, or when your testing skewer comes out clean when inserted.

Let it cool, slice and enjoy.

Wait… what the hell – cut it immediately and let fresh butter melt onto your slice. Inhale that beautiful aroma. Then stuff your face.

Sometimes one just needs a morning run along the beach to wash the worries away.
I'm in the audience tonight. Break a leg, #capetownfunnyfestival friends!!
Another night at a theatre, photographing these fine artists. Working on the @capetownfunnyfestival always warms my cold, cynical heart 💓 #capetownfunnyfestival #capewintertonic #comedy #funny #lovemyjob
Bruised knuckles thrill me so. #karate #feelingalive #maximumeffort
It's my favourite time of year. @capetownfunnyfestival is here. But first... Sound & light check. #capetownfunnyfestival #capewintertonic #lovecapetown #comedy
This pic was taken a few years back after I successfully completed my first swim loop in the ocean. After overcoming a massive fear of water and learning to swim, I grew to love #ows. Yesterday, I found myself knee-deep in the water, ready to dive in and take my first sea swim in a couple of years. But I lost my nerve. The smell of my wetsuit and the coldness of the water excited me, and awesome memories flooded back in an instant. But I didn't swim. I couldn't. What happened to the mermaid?
This is less than a litre of rain #water. Half boiled. Half cold. This is my bath. Due to a water meter issue, for which we have had no explanation from the City for almost a month despite many emails and social media DMs, we haven't had running water for three and a half weeks. I'm less than amused.
I'm registering @kraykrisofficial and @heidimeetsworld for the 14 July session. If you're interested to know what your kids' natural sporting talent is (beyond the usual), join us at the @sportanalytiksa sports day.
Mini-break. Such beauty right in our backyard. #durbanvillehills #weekend #getaway #lovecapetown
